My friend has a birthday tomorrow and I am making the cake, but I wanted to try to make some kosher for passover cupcakes because several of my friends are jewish. Is this even possible or do I need lots of fancy kosher ingredients?

I don't no a recipe for it but it is possible you would use potato starch instead of flour but they never taste normal like it taste really bad when ever I make cupcakes with potato starch in them so I think you should just skip that idea.

If your friends are truly observant, what you put in the cupcakes is not all that matters; it's what bowls they are mixed in, with what utensils, and in which pan and oven they are cooked. If they're not that observant, you could try to find a recipe, but you'd have to buy special ingredients. Instead, try to find a Kosher market and buy some there (or a Kosher for Passover cake or macaroons) instead!

I once made an amazing lemon bar recipe that substituted almond flour (ground up almonds) for normal flour in the crust, and potato starch for the corn starch. They were fantastic. I wish I had the recipe, but if you look up a normal lemon bar recipe and passover substitutions, you'll be able to make something very, very good. Happy Passover!

heres one of my favorite recipes. you cant even tell it has no flour. seriously

Heavenly Crumb Cake

1 cup sugar

1 cup brown sugar

1 teaspoon baking powder

1 tablespoon vanilla sugar

1 cup oil

4 large eggs

1 cup potato starch

Crumb Topping:

2 tsp cinnamon

½ stick margarine (cut into small bits)

½ (8 oz) box ladyfingers crushed

¼ cup brown sugar

¼ cup sugar

Preheat oven to 350’. Spray a 9x13 pan with nonstick spray. In the bowl of mixer, at medium speed, combine all cake ingredients until you have a smooth batter, pour into prepared pan, and bake uncovered for 20 minutes. Combine crumb ingredients, using your fingers to pinch into coarse crumbs. Sprinkle crumbs over cake and bake additional 35 minutes.

Use matzo cake meal instead of flour or finely ground nut meal. Use short bursts is a food processor as to not end up with nut butter.
