The best Hebrew greeting is Mo`adim lesimha.

English I say Happy Passover! or some say differently.

The Hebrew greeting is "Chag Pesach Sameach"; in English, "Happy Passover" will do very nicely. Either way, the fact that you're wishing someone a joyous Passover is far more important that the language you choose :-)

"Chag Kosher V'Sameach," or "Chag Sameach," whichever works. But you can just say "Happy Passover," or "Have a nice Passover," thats also fine.
