I understand it commences at sundown on the 15th day of Nisan and goes on for a week. That means the food would have been prepared in advance of sundown on the 15th and everybody would sit down to eat after the sun went down on the 15th.

The Passover (Lamb) is SACRIFICED on the 14th, 'between the two evenings' (Exodus 12:6) -- that is, between the ninth hour (approximately 3:00 pm) and sunset (close to 6:00 pm at the time of Passover).

The Passover MEAL is then eaten on the night of the 15th -- after it is cooked and before it is "morning" (morning does not mean daybreak in this case, but roughly after midnight).

This is an extremely controversial topic. And there are very many opinions. However, it is also an topic that I've been studying for the past 15 years, and I may be able to resolve other related questions you might have. I've also written some essays on various aspects of the Passover and when it is to be observed in Christianity, including aspects of the Bread and Wine memorial of Jesus Christ. Feel free to contact me.

15th.

which, by the Gregorian calendar, would be at sundown of the day that is marked as the 14th on a combined calendar.

The SERVICE starts at sundown or so, and the dinner begins when the service comes to "dinner is served."

That would be when a FIRST seder is done. But many people will do others, typically on the second and the last two days.
